Chicken Nuggets

What you need

  • 1 lb organic boneless chicken thighs
  • 1/2 cup Avocado Mayonnaise (can be found at Superstore or Costco)
  • 1 cup almond flour
  • 1-2tsp organic Italian seasoning (be sure to check the label for no sugar)
  • 1/8 teaspoon cayenne pepper (optional)
  • Himalayan salt, pepper to taste

Preparation

  1. Season chicken with your seasoning, salt and pepper
  2. Dredge in mayonnaise then almond flour
  3. Place in a glass baking dish and bake at 350 degrees for about 30-40 minutes depending on the thickness of the chicken, cook till done
  4. Serve with eggplant chips, and the spicy avocado dip, yummy!
